INGREDIENTS

  1. Four large barley rusks
  2. 3 large mature tomatoes
  3. 120g feta cheese
  4. 80g mizithra cheese
  5. Olive oil
  6. Oregano
  7. Salt and freshly grounded pepper

COOKING STEPS

  1. Peel the tomatoes and mush them
  2. Drain them for 5 minutes
  3. Moisten the rusks with 40ml of water each and drizzle some olive oil.
  4. Crumble the cheeses with a fork
  5. Spread the grated tomato on each rusk and add the cheese. Sprinkle with salt, pepper and oregano and drizzle some more extra olive oil
  6. Perhaps you could add some capers and/or black olives if you’d like.
